OUR COFFEE

In El Salvador Arabica coffee is grown mainly from commercial varieties: Bourbon, Pacas, Pacamara and Red Catuai. Of these, the Bourbon and Pacas cover approximately 83% of planted areas. (Based on information from Procafe). Coffee from El Salvador has unique characteristics, sweetness , body and acidity, which has allowed its coffe to have an excellent reputation worldwide and be a preferred coffee by buyers in the internacional and domestic market.

Borgonovo currently offers High Grown coffee (HG): Produced between 800 to 1,200 meters a.m.s.l. Coffee bean characteristics: Processed Grain size between 50 and 60% on # 17. And Strictly High Grown (SHG) : Produced above 1,200 meters. Grain characteristics: Processed Grain size above 60% on # 17.

A specialized team of pickers, collect the cherries at optimum maturity. The coffee is immediately transferred to Beneficio San Carlos, where traceability and transparency is ensured. It is processed in a Penagos machine, and is transferred to parihuelas, where the beans are brought to the required humidity, where a secret combination of sun and shade hours. All this done to potentialize all the attributes in the coffee bean. We permit our clients to select the process the wish, form different honey processes or naturals and also the preparation that best fist their needs – screen size and defects.

San Carlos Estate coffee is produced under ideal conditions which guarantees great quality for our clients. The farm is planted with Bourbon and Pacas tree varieties, both of the Arabica species, which contribute greatly to our high quality cup. Recently, due rust issues, new high quality varieties/hibrids are being tested. The coffee is grown in altitudes starting at 900 meters above seal level and reaching over 1300 meters above sea level. This ideal altitude, combined with the very important shade growing practices, allows the coffee fruit to reach it’s full maturity at which it is carefully handpicked. Since the farm surrounds the family’s coffee mill, the coffee cherry is processed immediately after it is picked reassuring that our strict quality standards will be met.
